Picking Strawberries

Today the kids and I headed out to Tampa with some friends to pick strawberries. We were able to get a whole box full for $3. I highly recommend it. The kids were in heaven.

Creamy Italian Chicken

If only I could get her to come to my house and cook all these recipes.....think about it Stacy!



4 boneless skinless chicken breast halves
1 envelope Italian salad dressing mix
1/3 cup water
1 package (8 ozs.) cream cheese, softened
1 can (10 3/4 ozs.) condensed cream of chicken soup, undiluted
1 can (4 ozs.) mushroom stems and pieces, drained (OPTIONAL)
Hot cooked rice or noodles


PREPARATION:
Place the chicken breast halves in a crock pot. Combine salad dressing mix and water; pour over chicken. Cover and cook on LOW for 3 hours. In a small mixing bowl, whisk together cream cheese and soup until blended.Stir in mushrooms. Pour cream cheese mixture over chicken. Cook 1 hour longer or until chicken juices run clear. Serve Italian chicken with rice or hot cooked noodles.
Serves 4.

Leu Gardens



Last week I got a chance to spend the morning with a friend at Leu Gardens and take some pictures for her kids and grandkids before she heads out to her new home across country. I love my kids, but it was so nice to have a nice a relaxing morning without them. :) Thanks for the nice time!

Chocolate Eclair Dessert - Saucy J

So this is one of those desserts that is a HIT every time Stacy brings it. We all want to have a piece. We all want the recipe. So here it is. I highly recommend trying it if you haven't already. Thanks Stacy!




aaaaaaaaChocolate Eclair Dessert

aaaaaaaaa6 eggs
aaaaaaaaa1 1/2 cups water
aaaaaaaaa1 1/2 square butter
aaaaaaaaa1 1 /2 cup flour

TOPPING:
8 oz cream cheese
16 oz. cool whip
3 TBSP. milk
2 small pkg. instant vanilla pudding
3 cups milk
Hot fudge sauce

Beat eggs slightly. In pan, put butter in water and bring to a boil. Remove pan from heat and add flour, using portable mixer. Mix until smooth. Add beaten eggs and beat until smooth.

Spray large cookie sheet with Pam. Spread dough on cookie sheet. Bake at 400 for 25 minutes. (will puff up in spots) Cool completely.

In small bowl, mix softened cream cheese and 3 TBSP milk until smooth

In large bowl, beat pudding and 3 cups milk until smooth. Add cream cheese mixture from small bowl. Mix with portable mixer on low until smooth. Beat in cool whip. Spread on cooled crust. Drizzle chocolate on top (I do this right before I serve it). Keep refrigerated. Serves 12 to 14

Tortilla Soup - Saucey J

1 sm onion - finely chopped
2 large garlic cloves - minced
1 Tbsp chili powder
2 tsp ground cumin
1/2 tsp dried oregano
1 bay leaf
6 C. chicken broth
1 - 8oz can tomato sauce
1 tsp sugar
1/4 tsp pepper
3 large chicken breasts
1 1/2 cups corn tortillas - sliced thin and fried and salted
Saute onion 5 min. or until tender
Add garlic, chili powder, cumin, oregano and bay leaf - saute 1 min.
Add broth, tomato sauce, sugar, pepper - bring to boil.
Add chicken - simmer until chicken is cooked through. (about 15 min)
Transfer chicken to plate - cool and chop.
Add corn - simmer until heated through.
Return chicken and heat through.
Serve

Garnish with -
Tortilla strips
Sour Cream
Cilantro
Red Onion
Avocado
Jack Cheese

Mix Together:
1 lb. Package shredded cabbage
2 green onions chopped
2 packs Raman - oriental flavor crushed
1 sm. package slivered almonds toasted
5 Tbsp. Sesame Seeds
5 Tbs. Sunflower seeds toasted
1 lb. Boiled Chicken

aaaaaaaaaaaaaaaaaaaaaaaaaaaaaDressing: 4 Tbsp. Vinegar; 4 Tbsp. Sugar; 3/4 cup Olive Oil; aaaaaaaaaaaaaaaaaaaaaaa1/2 tsp. Salt; Seasoning Packets from Raman
aaaaaaaaaaaaaaaaaaaaaaaaaa
aaaaaaaaaaaaaaaaaaaaaaaWhen ready to serve combine ALL! (Serves 8)

The Stolen Recipes

I'm going to try out a new link on my blog - A section of recipes that I've gotten from others that are worth sharing with everyone.

The infamous Saucey J's Corn Salsa is the first one I thought I would post. It rivals anything Martha would put out.

I hope to add recipes here and there. Feel free to contribute.

Corn Salsa - Saucey J

2 cans sweet whole corn from 2 cans sweet whole corn
4 1/2 oz. sliced olives
1/2 red onion
1 red pepper
5 cloves fresh garlic (1/2 tsp=1 clove)
1/3 cup olive oil
1/4 cup lemon juice
3 TBSP cider or red wine vinegar
1 tsp oregano
1/2 tsp salt
1/2 tsp pepper
4 ripe avocados (add before serving)

Drain corn and olives of juice. Dice red pepper, onion and garlic. Combine all ingredients. Eat with tortilla chips and enjoy!
